Ingredients

  • 1 cup brown lentils, rinsed
  • ¾ cup long-grain rice
  • 3 large yellow onions, thinly sliced
  • ⅓ cup olive oil
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • 4 cups water or vegetable broth
  • Plain yogurt, cucumber, and mint for serving

Instructions

  1. Simmer the lentils in water or broth for 15 minutes; they should be partly tender but still hold their shape.
  2. Meanwhile, cook the onions with olive oil and a pinch of salt over medium heat, stirring often, until deeply brown and sweet, 25 to 30 minutes.
  3. Reserve half the onions, then add cumin and coriander to the pan and cook for 30 seconds.
  4. Stir the rice and par-cooked lentils into the pan with 2½ cups of their cooking liquid.
  5. Cover and simmer on low for 18 minutes; remove from the heat and rest, covered, for 10 minutes.
  6. Fluff gently and serve with the reserved onions and cucumber-mint yogurt.
