Ingredients

  • 2 cups masa harina
  • 1½ cups warm water
  • ½ tsp salt
  • 2 cups refried pinto beans
  • 2 cups shredded lettuce
  • 1 cup salsa roja
  • ½ cup Mexican crema
  • ¾ cup crumbled queso fresco
  • Sliced radishes
  • Oil for cooking

Instructions

  1. Mix masa harina, warm water, and salt into a soft dough; divide into 8 balls.
  2. Press each ball into a thick 4-inch round and cook on a dry griddle for about 2 minutes per side.
  3. While still warm, pinch up the edges of each round to form a shallow rim.
  4. Brush the sopes lightly with oil and return them to the griddle until crisp and golden.
  5. Spread with hot refried beans, then add lettuce, salsa, crema, queso fresco, and radishes.
  6. Serve immediately while the bases are crisp and the toppings are cool.
